A culinary week with a world of tropical fennel and spices will take place at the Sofitel Metropole in Hanoi from December 7 to 10.
On this occasion, participants will have opportunities to taste new dishes with typical spices of Vietnamese herbs and fresh oyster Tsarskaya prepared by a famous French cook, Mr. Olivier Roellinger of the Sofitel Metropole Hanoi. Moreover, a reputed French baker, Pio Cesare, will demonstrate his baking skills by presenting chocolate cakes flavoured with different kinds of herbs from Vietnam.
Mr Didier Corlou, culinary expert for Sofitel Metropole Hanoi, remarked that one of the typical features of Vietnamese cuisine was that each dish was made of or decorated with a kind of fennel, which made the dish more appealing and more tasty.
At this festival, apart from normal spices like basil, marjoram, laurel and dill, chefs will use typical spices grown by people of ethnic minority groups to make dishes, Didier added.
